After our holiday in Thailand and two cooking classes we definitely have something culinary to share with the world. The first dish I want to share with you is a Green Papaya Salad, the so called Som Tum, which is awesome as first dish or even as main dish for hot days. We learned this dish in Ann’s Cooking Class in Khao Lak. Ann does not only make Cooking Classes but is also a snorkeling and diving guide and will take you to awesome places. Ingredients for 2 people:

3 to 6 Thai chiles (fresh or dried), chopped

2 garlic cloves, minced fine

1 tablespoon sugar

1 1/2 tablespoon lime or lemon juice

1 tablespoon fish sauce
-
2 tomato sliced into 6 wedges

1-pound green papaya, peeled and shredded (if not available, substitute with kohlrabi or carrot)

2 tablespoons roasted peanuts
- add some carrots or long green beans for a little bit color

Use a pestle and mortar for making this salad.

Pound the garlic and chilli until they are smooth.

Add tomatoes, lime juice, fish sauce and sugar – mix them well until the dressing taste as you like.

Add shredded green papaya and mix it well.

Garnish with roasted peanuts before serving

Serve with lettuce
